1 cup + 2 1/2 Tablespoons cream
2/3 cup milk
1 medium clove garlic, peeled and crushed
2 1/4 pounds potatoes
3/4 teaspoon salt (or to taste)
1/8 teaspoon ground white pepper (or to taste)
1 cup, firmly packed grated Cheddar cheese
Preheat oven to 400º F.
Stir cream, milk and garlic together in a medium bowl.
Peel potatoes and slice into 1/8 inch slices.
Layer the potato slices, seasoning with salt and pepper between the layers, in a 13x9 baking dish.
Pour cream mixture over the potatos.
Cover with parchment paper then with aluminum foil.
Bake for 1 hour 15 minutes or until potatoes are tender when tested with a knife.
Remove the aluminum foil and parchment paper.
Increase oven temperature to 425º F.
Sprinkle the grated cheese over the potatoes.
Return the potatoes to the oven and bake for 15-20 minutes or until the cheese is melted and golden.
Allow the potatoes to set for 20 minutes before cutting and serving.
