Beef, Mushroom and Barley Soup
Quick and easy...and very hearty!
1 pound beef, cut in cubes
2 cans beef broth
1/2 pound mushrooms, sliced
1 medium onion chopped
2 or 3 carrots sliced
1/2 cup barley
Bay leaf, savory, marjoram, or herbs of choice
Sauté beef in a little oil, add mushrooms, carrots, and onion.
Sauté until onions are translucent.
Add the rest of the ingredients.
Simmer until barley is done.
Serve with French Bread.
