New England Dinner OR 'Bubble and Squeek'
In Spain (for the British) I made this...I called it a New England Dinner...they called it Bubble & Squeek. Whatever you call it be aware that you'll call for it often!
1 medium head cabbage, coarsely chopped
1 pound ring bologna or smoked sausage, cut in chunks
6 medium potatoes, peeled and chopped
1 cup water
1 Tablespoon pickling spice (I put it in a tea ball)
Preheat oven to 400º F.
Mix together the cabbage, bologna, potatoes and water.
Put in a 13x9" ovenproof dish with the spices.
Bake for 30 minutes, or until the potatoes are tender.
Top with a pat of butter, salt and pepper.
Posted by oz. When I started making this I used a corned beef but found that the British (and the Irish) don't know what our corned beef is all about so I switched to the sausage.
