Cream of Broccoli Soup
1/2 cup chopped onion
2 small stalks broccoli
3 cups water
1 chicken bouillon cube
1 clove garlic, crushed
1 cup half and half
Saute onion in small amount of margarine or bacon grease.
Cut flowerettes off broccoli stalk; wash and reserve.
Peel stalks and chop into pieces.
Bring water and bouillon to a simmer; add onions and chopped stalks and simmer 15 minutes.
Add garlic and flowerettes and simmer another 15 minutes.
Put in blender and puree.
Return to pot and add half and half.
Add salt and pepper and heat through, but do not boil.
