Easy Apple Coffee Cake
I got the recipe from Allrecipes.com. I changed it slightly but it was yummy. I stirred the apples and cinnamon together and layered it instead of separately. I also left out the walnuts (since I didn't have any and my kids prefer it without nuts). I also used French Vanilla pudding in the recipe and sprinkled powdered sugar over the top after I had removed it from the pan.
1 (18.25 ounce) package yellow cake mix
1 (3.4 ounce) package instant vanilla pudding mix
4 large eggs
1 cup sour cream
1/2 cup vegetable oil
1/2 cup white sugar
2 teaspoons ground cinnamon
1/2 cup chopped walnuts (optional)
6 medium apples - peeled, cored and sliced
Preheat oven to 350º F (175º C).
Grease and flour a 10 inch Bundt pan.
In a large bowl, stir together the cake mix and instant pudding mix.
Add the eggs, sour cream and oil, mix until well blended.
In a small bowl combine the sugar, cinnamon and walnuts.
Pour half of the batter into the prepared pan, then place a layer of sliced apples over the batter and sprinkle with half of the cinnamon walnut mixture.
Pour the remaining batter over the top and repeat with the remaining apples and cinnamon walnut mixture.
Bake for 60 to 70 minutes in the preheated oven.
Cool for 1/2 hour before removing from pan to cool completely.
