I think this Kale Chip thing is all the rage! I heard about it at the farmer's market. There is a nice man from Chicago who makes them for everyone and was happy to tell me all about it. My mom then clipped this recipe from the Tribune newspaper and I have to say, I was excited when I finally tried them. What could be better than snackin' on our cruciferous superhero for pure yumm?!
1 bunch Kale - Red or Lacinato
1 teaspoon olive oil
1 teaspoon red wine vinegar
1/2 teaspoon salt
Slice the hard vein out of the Kale.
Chop into strips.
Wash and spin dry.
In a large mixing bowl toss the kale by hand with oil, vinegar and salt.
Spread out on 2 parchment lined baking sheets.
Bake at 350º F until crisp to the touch: 10 minutes or so.
Watch so as not to burn.
Eat like popcorn or with a dip.
