Hot Dog Relish :rectnt

Hot Dog Relish

This relish is slightly sweet.
Ingredients:
5 cups ground cucumbers
3 cups ground onions
3 cups ground cut up celery
2 hot red peppers ground up
2 sweet red peppers ground up
3/4 cup salt
1 1/2 quarts water
3 cups sugar
2 teaspoons mustard seed
2 Tablespoons celery seed
1 quart vinegar
Instructions:
Soak the cucumbers, onions, celery, peppers and salt in the 1 1/2 quarts water overnight, then in the morning drain off all water.
Then bring to a boil the sugar, mustard seed, celery seed and vinegar.
Add the vegetables and boil 10 minutes.
Put in a jar and seal.

I process the sealed pint jars in a boiling water bath canner for about 10 minutes. Once the lids ping you know the jars are sealed. They can then be stored on the pantry shelf for at least one year. I use this pickle relish in mayonnaise to make tartar sauce.
