Vege-Stroganoff

I have often made it similarly to the recipe Cathyntx posted (only with vegetarian subsitutes for the meat, of course). However, the FIRST stroganoff recipe I was introduced to as an earliteen attending a church potluck in Conifer Colorado was somewhat different. Since I was into trying new things and collecting recipes even back then, I of course asked for the recipe!
Serves 6.
Ingredients:
1 can (about 20 ounce) Vegecuts (this is an OLD recipe, so I'm not even sure these are still available, but you can use an equal amount of any vegetarian canned "steak or cutlet" substitute, such as Choplets, a Worthington product -- made by Kelloggs. 3 Tablespoons oil
1 can (8 ounce) mushroom pieces
1 can (8 ounce) tomato sauce diluted with 2 cans water
1 package Lawry's Spaghetti Sauce Mix
1/2 teaspoon Accent (I omit)
1/2 pint dairy sour cream (of course, I use a dairy-free substitute -- my favorite is Tofutti's Better Than Sour Cream)
Cooked rice or noodles
Instructions:
Drain and reserve liquid from Vegecuts and mushrooms.
Cut Vegecuts into this strips and dry out on cookie sheet in low oven.
Place strips in paper bag with flour and seasonings (LuAnn suggests a shake or two each of Lawry's seasoning salt, onion and garlic powder, and -- if you have it, a powdered vegetarian beef-style seasoning, such as McKay's)
Shake well.
Place in heavy skillet and fry in hot oil until brown.
Add remaining ingredients, including liquid from cans.
Simmer slowly about 25 minutes.
Add sour cream before serving.
Serve with hot rice or noodles.

Recipe is from what has become a Seventh-day Adventist vegetarian classic, An Apple a Day, which was originally published over 40 years ago, but still in print and popular! (An article I read, which was not current, said sales had already surpassed 100,000 copies, and now includes a second volume). Chances are, if you were to attend most any potluck following a Seventh-day Adventist church serice, you would find a number of dishes prepared from this book! It contains recipes compiled by the Women's Auxiliary to the Alumni Association for Lomam Linda University, School of Medicine. My mother's copy, which I own, cost $3.75!
