This recipe is one of several a friend who was stationed in Korea in the 70's received from her maid.
1 medium potato
1 medium onion
1 medium carrot
2 large eggs
3/4 cup flour
1/4 cup ice water
1 teaspoon salt
Combine eggs, flour, water, and salt.
Mix with vegetables.
Heat oil in skillet (1 1/2 inches deep).
Spoon vegetables into hot oil by tablespoonsful.
Fry until brown.
Drain on paper towels.

You can use a mixture of white and sweet potatoes when making this.
