Home made caramel corn is easy to do!
8 quarts popped popcorn
1 cup margarine
2 cups brown sugar
1/2 cup Karo syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla
about 4 Tablespoons oil for popping
Pop the corn in oil.
Put popcorn in large roasting pan (a turkey roasting pan works very well).
Boil next four ingredients for 4 minutes.
Remove pan from heat and stir in baking soda and vanilla.
Pour hot ingredients over popcorn.
Stir until popcorn is well coated.
Put mixture into 225º F oven for one hour, stirring every 10 minutes.
For reference, usually you will need about 1/2 cup unpopped corn to get 8 quarts popped corn.
