Chocolate Oat Squares
Source: Oct.-Nov. 2000 Taste of Home
These bars have a really thick layer of the fudgy chocolate in the center, which makes them really rich.
Be sure to note that 3 ingredients say "DIVIDED", as part is used in the batter mixture, and part in the chocolate mixture. So read the directions carefully before proceeding.
1 cup plus 2 Tablespoons butter or margarine, softened, DIVIDED ( I used butter)
2 cups packed brown sugar
2 large eggs
4 teaspoons vanilla extract, DIVIDED
3 cups quick-cooking oats
2 1/2 cups all-purpose flour
1 1/2 teaspoons salt, DIVIDED
1 teaspoon baking soda
14 ounce can sweetened condensed milk
12 ounces (2 cups) semi-sweet chocolate chips
1 cup chopped walnuts
In a mixing bowl, cream 1 cup butter and brown sugar.
Beat in eggs and 2 teaspoons vanilla.
Combine the oats, flour, ONE TEASPOON of the salt, and the baking soda; stir into creamed mixture.
Press 2/3's of oat mixture into a greased 15" x 10" x 1" baking pan.
In a saucepan, combine milk, chocolate chips and remaining 2 Tablespoons of butter and 1/2 teaspoon salt.
Cook and stir over low heat until chocolate is melted.
Remove from the heat; stir in walnuts and remaining 2 teaspoons of vanilla.
Spread over the crust.
Sprinkle with remaining oat mixture.
Bake at 350º F for 25 minutes or until golden brown.
Cut into squares.
Yield: 4 dozen.

I think next time I will try making a double batch of the oat mix, and only one batch of the chocolate and make TWO 15" x 10" pans. The chocolate would be a much thinner layer that way, but it would be plenty for me. This says it makes 4 dozen, but I got 70 bars (about 1" square each) out of it. They are way too rich, albeit delicious, to cut into bigger bars, IMHO.
