Coconut Dream Bars
The first time I had these, my friend made them with part Splenda, Egg Beaters, and Smart Balance instead of butter. They were excellent! However, even so, when I make them, I use all sugar, real eggs and real butter.
1 cup flour
1/3 cup soft butter (or Smart Balance)
1/4 cup packed brown sugar (or use 1/2 of it Splenda)
2 large eggs (or Egg Beaters)
3/4 cup brown sugar (or 1/2 Splenda)
1/4 cup flour
1/2 teaspoon baking powder
1 teaspoon vanilla
1 1/3 cup shredded coconut
1 cup chopped walnuts (or other nuts)
Blend flour with brown sugar (or brown sugar and Splenda).
Add butter or Smart Balance and mix until blended.
Press in ungreased 9" square pan.
Bake at 350º F for 15 minutes.
Beat eggs (or Egg Beaters) until thick and light.
Gradually add 3/4 cup brown sugar (or 1/2 Splenda) and beat until light and fluffy.
Then in separate bowl, mix 1/4 cup flour and baking powder; fold into egg mixture.
Fold in vanilla, coconut and nuts.
Spread over crust and bake for 20-25 minutes until lightly browned.
Wait until cool before cutting.
