FYI: Recipe Note Tips - Hard Boiled Eggs

Foolproof hard-cooked eggs are a snap to make!
Place a single layer of eggs in a saucepan or other large pot; cover with 1 1/2 inches of cold water. Bring to a boil, remove from heat, cover and let stand for 12 minutes (and you won't have that nasty 'green' color surrounding the yolk). Drain off hot water and immediately cover with cold water. Let the eggs sit until cold. Be sure to store all uneaten hard-cooked eggs in the refrigerator. Quick tip: Older eggs tend to be easier to peel than fresh eggs. So its a good idea to purchase the eggs a week before you plan to hard-cook them.
