Delicious Impromptu Stir-Fry

This really isn't a measured recipe, so you can take liberties as you like, but DO use the mango chutney!
Ingredients:
Fresh vegetables of your choice, as many as you like, chopped or sliced however you like (red bell pepper, orange bell pepper, mushrooms, broccoli, carrots, snow peas, canned baby corn, water chestnuts, slivered red cabbage, etc.)
Chopped green onions with tops
Fresh garlic clove, minced or pushed through a garlic press
Leftover cooked rice, any kind
Equal parts butter and a good olive oil
Mango chutney or hot mango chutney
A light sprinkle of salt
For the very brave who like more spicy heat, add a pinch or so of Emeril's Essence
Instructions:
Stir fry the veggies in the butter and olive oil until done to your liking (crisp or very tender), adding the hardest veggies first and working down to the onion and garlic last (garlic burns easily, so add it a minute or so before the end of the cooking time).
Add your pre-cooked rice and however much mango chutney you need to flavor the whole thing.
Add Emeril's Essence if you want it more spicy.
Stir to heat through.
Taste, adjust seasonings and serve.

Yummy as a side dish, or for a main dish, add cubed chicken and/or shrimp at appropriate times during the stir-fry process, depending on whether you are using raw or cooked meat.
