Crispy and delicious pancakes! Serve with real maple syrup and sausage on the side.
3/4 cup all-purpose flour
2 Tablespoons sugar
1/2 cup cornmeal
4 teaspoons baking powder
3/4 teaspoon salt
5 Tablespoons butter
1 cup milk
2 large eggs
In a large mixing bowl, blend together flour, sugar, cornmeal, baking powder and salt.
In a small saucepan, melt butter in milk; cool to lukewarm and add eggs.
Add egg mixture to flour mixture; blend well.
Lightly coat a griddle with non-stick vegetable spray and pour 1/4 cup batter on griddle.
Cook for 2 minutes, flip and cook other side for one additional minute or until pancake is golden.
Repeat with remaining batter.
Makes 12 pancakes.
