Orange Cranberry Rolls
1 10-ounce tube refrigerated pizza crust dough
1/2 cup orange marmalade
2/3 cup dried cranberries
1/2 cup powdered sugar
1 1/2 teaspoon lemon juice
1 teaspoon hot water
Press dough into a 12 inch by 9 inch rectangle.
Spread marmalade onto dough, leaving a 1/2 inch border around the edges.
Evenly place creanberries over marmalade, gently pressing into the dough.
Beginning with the long side of the dough, roll up jelly roll-style.
When completely rolled, pinch the seam to seal but don’t seal the ends of the roll.
Slice roll in 12 one-inch slices, then place them, cut sides up, in muffin cups lightly coated with non-stick vegetable spray.
Bake at 375º F for 15 minutes.
Remove from muffin cups and place on a wire rack to cool completely.
Blend together powdered sugar, lemon juice and water; stir until smooth and drizzle over warm rolls.
