Peaches and Cream French Toast
1 loaf French bread, sliced into 8 thick slices
1 3-ounce package cream cheese, softened
3 Tablespoons peach preserves
1 teaspoon brown sugar, packed
3 large eggs
1/2 cup milk
1/2 teaspoon vanilla extract
1/4 teaspoon cinnamon
Garnish: powdered sugar and maple syrup
Cut a pocket into each bread slice by cutting from the top crust side almost to the bottom crust.
Be careful not to slice completely through bread.
In a small bowl, combine cream cheese, preserves and brown sugar.
Spoon about one tablespoon of mixture into each pocket.
In another small bowl, beat eggs, milk, vanilla and cinnamon until well combined.
Dip stuffed bread slices in egg mixture, letting excess drip off.
Spray griddle or skillet with non-stick vegetable spray.
Cook bread slices over medium heat until golden brown, turning once, about 2 minutes per side.
Lightly garnish each slice with powdered sugar and maple syrup.
Makes 4 servings.
