2 strips bacon, 1/4-inch dice
1 Tablespoon oil
1/2 medium onion, sliced thinly
3/4 pound green cabbage, sliced
2 Tablespoon cider vinegar
1/2 Tablespoon sugar
1/8 teaspoon garlic powder
3/8 teaspoon ground ginger
1/8 teaspoon pepper
3/8 teaspoon salt
Brown bacon lightly in oil in a skillet over medium heat.
Add onions and cabbage.
Stir until cabbage is coated with oil and begins to cook down.
Add all other ingredients and cook, stirring occasionally, until the cabbage is soft and the flavors have blended (3 to 5 minutes.)
Adjust seasonings to taste.
