1 Tablespoon ground cumin
1 Tablespoon dried oregano
1 Tablespoon garlic powder
1 Tablespoon ground black pepper
1 teaspoon Old Bay Seasoning
1 Tablespoon thyme, rubbed between the fingers
Combine all ingredients and massage into ribs.
Preheat oven to 300ºF.
Rip about 18" of foil for each serving (big enuf to wraps ribs entirely).
Wrap tightly in foil & place meaty side down w/seam on top.
Wrap ribs tightly in foil and place on cookie sheet.
Bake 2-1/2 hours.
Remove ribs from oven & foil and grill 3-5 minutes per side until charred.
