The original recipe came from my friend, Linda. I made a couple of changes, as noted.
2 green chilies , finely chopped, mild or hot, depending on how spicy you like it (optional)
2 Tablespoons brown sugar
2 Tablespoons lime juice
2 handfuls chopped cilantro
2 cloves finely chopped/minced garlic
Combine all ingredients.
The first time I made this, I cut the above in half as I only had one mango. Then I added one small (tennis ball size) tomato and 2 Tablespoons shredded coconut. If making the full recipe, increase those ingredients accordingly.
This goes well as a side with grilled pork, beef, fish, or chicken. I have also served it as a small salad on a bed of lettuce or mixed greens.
It has been a hit every time.
