Sesame Parmesan Zucchini
Another recipe to set aside for use this summer! It had many favorable reviews. If it's half as good as people said, I project that I will need to double or triple the recipe. BTW, I think a combination of green (zucchini) AND yellow squash would be attractive.

1 medium zucchini, quartered and cut into 1/2-inch slices
2 Tablespoons olive oil
1/4 teaspoon sesame oil
2 teaspoons sesame seeds
2 Tablespoons Parmesan cheese
1/4 teaspoon cayenne pepper
1/2 teaspoon garlic salt
Preheat oven to 400º F (200º C).
In a large bowl, toss the zucchini with the olive oil, sesame oil, sesame seeds, Parmesan cheese, cayenne pepper, and garlic salt.
Spread in a single layer on a baking sheet.
Bake 20 minutes in the preheated oven, until lightly browned.

LuAnn adds: Someone commented that the amount of oil could be halved, without compromising the results. One reader suggested the coating adhered better if the zucchini and oil were stirred together FIRST, before tossing in the other ingredients. Another suggested simply putting everything together in a ziploc bag and SHAKING. Easy.
*An important note was to check the zucchini after 10 minutes in the oven, and every 2 minutes thereafter, until the zucchini was tender, but not mushy.
