This is an elegant vegetable for company - or holidays - made in the ring, but it can also be made in a casserole dish. My DH's favorite vegetable is peas, so I usually use those instead of green beans.
3 Tablespoons Crisco shortening
1/3 cup finely chopped onion
3 cups mashed cooked carrots (12-15 carrots)
1 Tablespoon sugar
1 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon fresh nutmeg, ground
2 large eggs, slightly beaten
cooked green beans, green peas or other green vegetables of your choice
Preheat oven to 350ºF.
Melt Crisco in heavy skillet over medium heat.
Add onion; cook until tender.
Combine onion mixture with carrots, sugar, salt, pepper, nutmeg and eggs in a bowl; mix until well blended.
Pour into a well-greased 4 cup or 5 1/2 cup ring mold.
Carefully place a shallow pan of hot water in oven, then set mold inside pan.
Bake at 350ºF for 1 hour or until firm.
Immediately unmold onto serving platter.
Fill center with cooked green beans or your favorite green vegetable.
I frequently make this in a casserole as a carrot dish alone, forgoing the added green vegetable.
