Homemade Granola
Ingredients:
2 1/2 cups rolled oats, thick
1/2 cup raisins
1/2 cup cherries (or cranberries or craisins), dried
1/2 cup walnuts, unsalted
1/2 cup almonds, raw, unsalted
1/2 cup maple syrup (or lite maple syrup) sugar-free
2 Tablespoons honey
2 1/2 teaspoons cinnamon
1 Tablespoon butter
Instructions:
Preheat oven to 300 F.
In a mixing bowl, combine all dry ingredients (except cinnamon).
In a small sauce pan heat butter, maple syrup, honey and cinnamon until boiling; remove from heat.
Combine the mixture with the dry ingredients and thoroughly mix together.
Place on a sheet tray and bake in oven for 30 minutes; mix at the 15 minute mark.
After 30 minutes turn oven off and partially open the door; allow to cool for 1 hour.
Remove from oven and portion out into bags for individual servings; serve with a dairy product, such as fat-free yogurt.
Serves 13 people.
