Homestyle Egg Scrambler
1 large egg
1 large egg white
1 fluid ounce milk, fat free
1 teaspoon olive oil
1/4 cup red potato, medium, diced with skin on
1 ounce Vegetarian Sausage Crumble
1/4 cup yellow onion, diced
1/4 cup red bell pepper, diced
1/2 cup Strawberries
salt and pepper to taste, if desired
Gather all of your ingredients and a large sauté/frying pan, preferably non-stick.
In a mixing bowl combine the eggs, egg whites and milk; whisk until smooth.
Heat pan medium high to high; once pan is heated add in the oil and potatoes.
Brown potatoes 6 to 8 minutes and add in veggie sausage crumbles; continue to brown an additional 3 to 5 minutes.
Add in the onions and peppers and sauté until translucent (about 3 to 5 minutes).
Add in the egg mixture and cook until scrambled.
Serve warm with strawberries on the side.
