You will need:
1/4 head Boston Bibb Lettuce, cleaned and leaves torn or chopped
1/2 Plum Tomato, diced
1 ounce Avocado, sliced
1/4 egg, hard-boiled, chopped
1 ounce Turkey Bacon, cooked and chopped
1 1/2 black olives, chopped
2 ounces sweet corn, canned, drained (packed in water);
2 ounces Chicken Breast, cooked, diced
1/2 ounce Blue Cheese, crumbled
3/4 Tablespoon dressing, low-fat (your choice of flavor)
1/4 cup croutons, fat-free.
Place the following into a mixing bowl; tomatoes, egg, olives, corn, chicken breast and mix together.
Place the bibb lettuce into bowl and drizzle dressing.
Portion out the mixture from step 1 and top with croutons.
Garnish with avocado slices, turkey bacon crumbles and blue cheese.
