Catfish with Cilantro Sauce

Catfish with Cilantro Sauce
2 teaspoons olive oil
4 catfish fillets
1 1/2 teaspoon garlic, minced
3/4 medium yellow onion, diced
3/4 cup red bell pepper, chopped
7 medium roma/plum tomatoes, diced
2 medium limes, juiced
1 cup chickpeas/garbanzo beans, canned and drained
1 bunch cilantro leaves, roughly chopped
salt and pepper(optional)
Gather all your ingredients, a frying pan, and a cookie sheet tray.
Preheat oven to 375 F.
Heat the frying pan and place oil in pan.
Add fish fillets and brown on one side; flip and brown on the other, then remove fish to cookie/sheet try and place in oven.
Add garlic, onion, and red bell pepper to frying pan and toss around for 2 minutes, add in diced tomatoes and stir.
Add lime juice, chickpeas/garbanzo beans and cilantro.
Continue to cook for 5 to 6 minutes; season with salt and pepper, if desired.
Carefully remove fish from oven and place onto plates; top with sauce.
Serve immediately.
