Chocolate Banana Cream Pie
You will need:
1 1/2 cups cottage cheese, small curd (1 percent milk fat)
3 ounces Neufchatel (1/3 less fat) Cream Cheese, softened
1 large egg
3 Tablespoons Splenda sugar blend
1 graham cracker pie shell, low fat
1 package chocolate pudding mix, instant, sugar-free, fat free
1 cup bananas, mashed (about 2)
1/2 cup milk, fat free
2 Tablespoons Cocoa Powder
Preheat oven to 350º F.
Place cottage cheese, cream cheese and Splenda in a bowl; with an electric mixer, beat for 5 minutes or until a creamy consistency has formed.
Add in banana, egg, and milk, and mix until combined.
Transition to a low speed and place cocoa powder and chocolate pudding mix into bowl; mix until thoroughly combined.
Pour mixture into pre-made pie shell and bake for 30 minutes.
Carefully remove from oven and allow to cool at least 1 hour before refrigerating.
Refrigerate up to 4 hours or for best results, overnight, before serving.
