1 1/2 cups solid shortening
3 cups grated carrots
4 large eggs separated
1 cup flour
1 teaspoon soda
2 teaspoon baking powder
1 teaspoon salt
2 Tablespoons lemon juice
1 cup brown sugar
2 Tablespoons cold water
nutmeg and cinnamon to taste
plus corn flake crumbs (however much you want)
Mix shortening, sugar and egg yolks.
Add baking powder, baking soda, spices and salt to flour.
Cream all above after adding water and lemon juice.
Beat egg whites and fold into mixture.
Grease bundt pan and place corn flake crumbs on bottom before adding mixture.
Bake 15 minutes at 350º F -then bake for 25 minutes more at 375º F.
