Baked Fruit Alaska
Ingredients:
1 small cantaloupe melon, cut in half and de-seeded
1 cup strawberries, diced
1 cup blueberries
2 large egg whites
1 pinch Cream of Tartar
1 teaspoon fructose or sugar
1/4 teaspoon vanilla extract
Instructions:
Using an electric mixer, whisk egg whites and cream of tartar for 1 minute on high; add in fructose and continue to whisk until stiff peaks have formed (to a basic meringue).
Divide meringue atop the berries and place fruit into the oven and bake until meringue is slightly golden brown.
Carefully remove from the oven and serve warm.
