Chicken Nugget Sliders
In trying to make lunch more interesting, and staying with the new trend that 'smaller is the new larger', we came up with an easy twist that easily changes a snack into a real meal.
1 roll of Pillsbury biscuits
10 chicken nuggets (we like the Mickey Mouse ones with their garlic flavor)
thousand island dressing (or 500 island for the diet conscious)
Preheat oven to 400º F.
Open the biscuit package and place the biscuits on an ungreased cookie sheet with the sides slightly touching.
Bake biscuits for 9 to 10 minutes.
Increase oven temperature to 450º F.
Place chicken nuggets on the cookie sheet and place in oven.
Bake per package instructions
Meanwhile split the biscuits and spread insides with the dressing.
Add lettuce to the bottom 1/2 of the biscuit.
When the nuggets are finished remove from cookie sheet directly to the biscuits.
Close biscuits to make the 'sliders' (mini-sandwiches) and serve.

Serves 5 (but then doubling the recipe also only serves 5, so go figure)!
