Irene's Energy Balls

When I found myself away from the kitchen at mealtime recently, I spent $2.59 for a natural food energy/protein bar containing dried blueberries and almond butter etc. (For complete list of ingredients, see the Comments below). The bar was delicious! I deemed it deemed worth the price, though not something I could afford to enjoy very often. Just two days later, this recipe for "energy balls" made from dried fruit and almond butter arrived in my inbox! With a little experimentation, I think it could be tweaked and made into a fairly good homemade version of the bar I enjoyed! I'm sure one could substitute their own favorite dried fruits for the apricots and figs.

Ingredients:
1 cup dried apricots
1 cup dried figs
1 cup dates
1/2 cup raisins
1 cup unsweetened coconut
1/2 cup almond butter
1/2 cup honey
Instructions:
Grind apricots, figs, dates and raisins in food processor, each ingredient separate.
Add unsweetened coconut.
Mix almond butter and honey.
Combine the fruit mixture and almond butter mixture.
Make into balls and chill in refrigerator.
