Cathy's Potato Patties
I just kick up regular potato patties another notch.
1/2 cup stiff leftover mashed potatoes
1/4 cup cream-style corn
1/2 beaten egg (yes, I beat an egg and use 1/2 of it)
1 Tablespoon or more flour to bind ingredients
1/2 teaspoon or more dill weed, to suit taste
1/2 teaspoon or more dried minced onion or flakes, to suit taste
Mix and drop by Tablespoonfuls into hot fat.
Brown on one side and carefully turn to brown on other side.
Drain on paper towels and sprinkle with a little salt if desired.
Makes about 6 patties.

Depending on the beginning texture of your mashed potatoes and however liquid your creamed corn is, you may have to add more flour or even instant potato flakes to thicken it some.
Try to turn only once and don't be messing with them in the pan.
A patty is easier to turn using two pancake turners, one to slide under, the other to flip it to and lay it back in the pan.
