Cherry Pear Cobbler
2 21-ounce cans, cherry pie filling
3 pears, peeled, cored, and chopped
1 1/4 cups all-purpose flour
1/4 cup plus 1 Tablespoon sugar, divided
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup whipping cream
2 Tablespoons sliced almonds
Blend together cherry pie filling and pears in a 2-quart baking dish; bake at 400º F for 15 minutes.
While fruit is baking, prepare batter by sifting together flour, 1/4 cup sugar, baking powder and salt in a large bowl.
Gradually stir in cream with a fork, until mixture forms a thick, sticky batter.
Remove baking dish from oven, drop batter by spoonfuls on top of fruit mixture.
Sprinkle dough with remaining sugar, top with almonds.
Bake 40 minutes longer or until biscuit topping is golden brown.
