Chessy Swiss Pie
1/3 pound ground beef,
1 medium onion, chopped
2 to 3 Tablespoons green peppers, chopped
9 inch pie crust, unbaked
6 slices Swiss cheese, divided
salt and pepper to taste
10 ounce package frozen, chopped spinach, cooked
1 large egg, beaten
Brown ground beef, onion and green peppers.
Drain and spread into the bottom of pie crust.
Arrange half of cheese over meat.
Season lightly with salt and pepper.
Mix spinach with egg, spoon evenly over cheese.
Bake at 450º F for 10 minutes, then reduce heat to 325º F and bake an additional 20 minutes.
During the last 5 minutes, place the remaining cheese on top and return to oven to melt.
Makes 6 to 8 servings.
