1 green pepper, sliced
1 yellow pepper, sliced
1 red pepper, sliced
1 onion, sliced
2 pounds ground beef, browned
28 ounce can whole tomatoes, drained and coarsely chopped
Cayenne pepper to taste
hot pepper sauce to taste
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon dried basil
salt and pepper to taste
cornstarch or all-purpose flour, optional
6 to 8 potatoes, peeled, cooked and mashed
In a large skillet, add peppers and onion to ground beef.
Mix in tomatoes and seasonings.
If needed, add cornstarch or flour to thicken; let simmer.
Pour beef mixture into a 13 inch by 9 inch baking dish, top with mashed potatoes.
Bake at 350º F for approximately 30 minutes.
Makes 6 servings.
