Upside-Down Meat Loaf
1 1/2 pounds ground beef
2/3 cup evaporated milk
1/4 cup fine bread crumbs
1/4 cup chili sauce
1/4 cup onion, chopped
2 1/2 teaspoon salt, divided
1/8 teaspoon pepper
2 to 3 tomatoes, peeled and thickly sliced
1 1/3 cup instant rice, uncooked
2 Tablespoon fresh parsley, chopped
1/4 teaspoon dried basil
1/4 cup water
Combine beef, milk, bread crumbs, chili sauce, and onion, 1 1/2 teaspoon salt and pepper; mix well.
Arrange tomatoes in the bottom of a pan or round 2-quart baking dish.
Sprinkle rice, parsley, remaining salt and basil over the tomatoes.
Pour water over the rice and tomatoes; cover with meat loaf mixture.
Bake at 350º F for one hour or until meat loaf is cooked throughout.
Remove from oven and let stand for 5 minutes, then invert over serving platter.
Makes 8 to 10 servings.
