Pat, when I saw your search for strawberry recipes, my mother's showstopper strawberry pie came to mind. In searching through my computer files, hoping to find it already typed up, I found Cathy's T&T recipe, which she posted in response to a search for favorite dessert recipes. Because it looks very much like my mother's, I am posting this one.
1 cup sugar
3 Tablespoon cornstarch
1 cup water
2 Tablespoon dry strawberry Jello*
1/2 teaspoon red food coloring
1 pint fresh strawberries, sliced
1 baked pie shell
1 1/2 cup whipped cream or Cool Whip
*LuAnn notes, you can save the remainder of the box in a small airtight container (be sure to mark what it is!), and use it for future pies. This pie is so delicious, I predict you'll want to make more than one! :)
Mix cornstarch into sugar in saucepan.
Add water and cook until thickened.
Remove from heat; stir in Jello and red food coloring until mixed.
Cool completely (not in the refrigerator, just at room temperature); add strawberries.
Pour into pie shell.
Top with sweetened whipped cream.
Chill and serve.
