Mock Spring Mushrooms
These are made into patties and fried.
1 can cream of mushroom soup
30 buttery-flavored snack crackers, crushed
1 can (8 oz) mushrooms bits and pieces
3 Tablespoons flour
2 large eggs
salt to taste
Combine all ingredients and let set overnight in refrigerator.
Form into 2 or 3 inch patties and fry slowly until browned.

They are good but not like the real thing. I have made them several times.
I got them from some from a newspaper (from down home).
