8 ounces plain yogurt, drained
1 large cucumber, grated and drained
1 clove (or more) garlic, minced
1 Tablespoon lemon juice
1 Tablespoon fresh mint (or 1 tsp dried)
1 Tablespoon fresh dill (or 1 tsp dried)
Drain yogurt by placing in coffee filter in a sieve for at least 8 hours.
Grate cucumber & drain in paper towel over colander (at least 1 hour).
Mix all ingredients & let sit at least 1 hour to blend flavors.
I use this as a sauce for salmon.
It is also great as a dip for crudite and pita bread.
