Chicken Fruit Salad
This is a nice salad for a ladies luncheon. We first had this at a progressive dinner party several years ago.
2 1/2 - 3 cups cooked diced chicken
1 cup sliced celery
2 Tablespoons chopped green onion or chives
1 teaspoon salt
2 Tablespoons lemon juice
1 ( 11 ounce) can mandarin oranges, drained
1/2 Tablespoon grated lemon peel
2 Tablespoons capers
1 ( 9 ounce) can pineapple chunks or tidbits
1/2 cup slivered almonds, toasted
1/2 cup mayonnaise
Combine chicken, celery, onion, capers.
Mix in salt and lemon juice.
Chill several hours.
Just before serving add fruit and almonds.
Combine mayonnaise and lemon peel.
Mix in carefully so as not to bruise fruit.
Spoon into a bowl lined with lettuce greens to serve.
