Beef and Bean Tortilla Bake

TNT with my revisions, that is! My changes are noted in parenteses below. With these changes, the dish is vegan.

"Spicy ground beef, tomatoes and black beans are layered with corn tortillas and Cheddar in our satisfying Casserole."

Ingredients:
1 pound ground beef (canned vegetarian "Burger" by Worthington)
1 large onion, chopped
1 Tablespoon dry fajita seasoning (1 packet)
2 cloves garlic, minded
2 cans (14.5-ounces each) diced tomatoes with green chiles (1 28-ounce can stewed tomatoes)
1 bottle (8-ounce) mild salsa
1/2 cup water
2 cans (15.5-ounces each) black beans, rinsed, drained (three cans of beans, 2 black and 1 pinto)
1 can (11-ounce) Mexicorn, drained (2 cups frozen corn)
6 corn tortillas, torn into large pieces (1 9-ounce bag Frontera Black Bean and Chipotle Tortilla Chips)
2 cups (8 ounces) shredded sharp Cheddar cheese (1 package Follow Your Heart vegan Nacho "Cheese")
(LuAnn added: 1 Tablespoon chili powder, 1 teaspoon ground cumin, and 2 tablespoons minced cilantro)
Instructions:
Preheat oven to 350º F.
Coat 2 quart baking dish with cooking spray.
Heat large nonstick skillet over medium-high heat.
Add beef, onion, fajita seasoning and garlic; cook stirring, until beef is browned, 7 - 8 minutes.
Add tomatoes with their juice, salsa and water; bring to boil.
Stir in beans and Mexicorn; remove from heat.
(Note that at this point, rather than layering ingredients as directed below, I simply reserved 1 cup of the shredded "cheese", then stirred all the rest of the ingredients together.
I then turned the mixture into the dish and reserved "cheese" over the top.
Much easier, and same end result!
Anyway, on to the directions as they appeared in the magazine.)
Spread 2 cups beef mixture in baking dish.
Arrange half of tortilla pieces over beef mixture to cover; sprinkle with 1/2 cup cheese.
Spread half of remaining beef mixture over cheese; top with remaining tortillas.
Sprinkle with 1/2 cup cheese.
Top with remaining beef mixture; sprinkle with remaining 1 cup cheese.
Bake until hot and bubbly, about 30 minutes.
