Sweet and Sour Pork
Ingredients:
2/3 cup brown sugar, packed
2 Tablespoons cornstarch
2 teaspoons dry mustard
1/2 cup catsup
1/2 cup water
15 ounce can pineapple chunks, undrained
2 Tablespoons soy sauce
salt and pepper to taste
3 pounds pork, cubed and browned
1 onion, chopped
1 green pepper, chopped
6 to 8 cups white rice, cooked
Instructions:
Combine brown sugar, cornstarch, mustard, catsup, water, pineapple, soy sauce, salt and pepper until thick and smooth.
Place pork in a 2-quart baking dish; pour brown sugar mixture over pork.
Bake at 350º F for 1 1/2 hours.
When 10 minutes are remaining in baking time, add onion and green pepper to baking dish.
To serve, spoon over rice.
Makes 4 to 6 servings.
