A custard type pie - main ingredient is zucchini.
1 unbaked 9-inch pie shell
1 cup zucchini, peeled and chopped in small chunks
1 cup sugar
1 cup Milnot, or evaporated milk
2 Tablespoons flour
1 1/2 Tablespoons melted butter
1 1/2 teaspoons vanilla
1 large egg
for 2 9" Pie Crusts:
2 cups flour
2/3 cup shortening
1 teaspoon salt
5 Tablespoons water, 5 to 7 Tablespoons
Cook zucchini in small amount of water 2-3 minutes.
Drain, place in blender.
Add next 6 ingredients and blend.
Pour into pie shell.
Sprinkle with nutmeg and cinnamon.
Bake at 425°F for 10 minutes, then 300°F for 20 minutes.
*I think you can buy Milnot yet BUT if not use evaporated milk.
Cut shortening into flour and salt.
Add enough water to make crust.
Roll out 1/2 recipe per crust.
Makes 2 – 9 inch pie crusts
