Peach Custard Pie
Makes 8 servings
Yield: 1 (10-inch) Pie
1 cup flour
2 tablespoons sugar
1/4 teaspoon salt
1/2 teaspoon baking powder
1/4 cup butter
2 cups fresh peaches, sliced
1 teaspoon cinnamon
1/3 cup sugar
1 large egg
1 cup cream
Preheat the oven to 375ºF.
Set out a 10-inch pie plate.
In a mixing bowl stir together the flour, sugar, salt, and baking powder.
Using a pastry blender, cut in the butter until the mixture is crumbly.
Press mixture into the bottom and sides of the pie plate.
Place the sliced peaches in the crust.
In a small bowl, stir together the cinnamon and sugar.
Sprinkle the cinnamon-sugar over the peaches.
Bake in the preheated 375ºF oven for 15 minutes.
Meanwhile, whisk together the egg and cream until frothy.
Remove the pie from the oven and pour the custard mixture over the peaches.
Return the pie to the oven for 30 minutes, or until the custard is set.
