This is quick and SIMPLE to make! It is really great! The first time I made it was for Gourmet Club and we all loved it. Even so, I added extra artichokes the 2nd time I made it !(just because we love artichokes....)
1 cup sliced green onions
1/4 cup chopped onion
2 Tablespoons butter or margarine, melted
2 Tablespoons flour
1 (14 1/2 ounce) can chicken broth
1 (14 ounce) can artichoke hearts, undrained and chopped
1/4 teaspoon white pepper
2 Tablespoons minced fresh parsley
Saute onions in butter in large saucepan until tender.
Add flour and cook 1 minute, stirring constantly.
Gradually stir in chicken broth and cook until thickened, stirring constantly.
Stir in artichoke hearts with liquid and white pepper.
Cook until thoroughly heated.
Spoon into serving bowls; sprinkle with fresh parsley.
This makes about 3 cups.
Notes: To make recipe ahead, prepare as directed. Cover and chill. Reheat to serve.
I have used the jarred marinated artichoke hearts in addition to the canned. I do drain the oil off, but the marinated artichokes give the soup a different flavor.
