Fresh Cherry Pie
This is a basic cherry pie, very good served with vanilla ice cream. The recipe makes one pie.
4 cups pitted fresh ripe tart red cherries
1 cup sugar [only 3/4 c. if cherries are somewhat sweet]
1/4 cup flour
2 pie crusts [I use Pet-Ritz deep dish frozen]
2 Tablespoons butter
Thaw pie crusts.
Combine cherries, sugar, flour, and salt.
Place in one of the pie crusts.
Dot cherries with butter.
Use other pie crust to make a lattice top over the cherry mixture.
Bake in a 400º F oven for 50 to 55 minutes.
Check doneness of pie crust halfway through.
Use a foil collar to prevent burning, if necessary.
