8 cups potatoes, boiled, peeled, and cubed
1/2 cup scallions, chopped
1/2 cup celery, chopped
2 Tablespoons parsley, chopped
1/2 cup almond slivers, toasted
1/2 teaspoon celery seed
2 teaspoons salt
1/4 teaspoon pepper, freshly ground
1/2 cup blue cheese, crumbled
2 cups sour cream
1/4 cup white wine vinegar
Optional: Garnish with fresh dill.
In a large bowl, combine potatoes, scallions, celery, parsley, almonds, celery seed, salt and pepper.
In another bowl, mix together blue cheese, sour cream and vinegar.
Pour over potatoes and toss to coat.
