1 1/2 teaspoons fresh parsley, chopped
3/4 teaspoon dried thyme
salt and freshly ground pepper, to taste
1 stick unsalted butter
4 to 5 potatoes, thinly sliced
In a zipping plastic bag, shake together with parsley, thyme, salt and pepper.
In a heavy skillet, melt 2 tablespoons butter and remove from heat.
Cover bottom of skillet with potato slices and dot with butter.
Sprinkle on herbs and repeat layers.
Cook potatotes over fire until golden and crispy on the bottom, flipping once, about 10 to 15 minutes on each side.
Cut into squares and serve hot.
