1 teaspoon vanilla extract
1 cup maple syrup
3 Tablespoons butter
4 to 5 red apples, sliced
4 to 5 sweet potatoes, boiled and sliced
Simmer vanilla and maple syrup in a large saucepan for 5 to 10 minutes; add butter and apples.
Cook until the apples are fork tender; remove from sauce with a slotted spoon.
In a greased 2-quart baking dish, layer apples and potatoes; pour sauce mixture over all.
Bake, covered, at 325ºF degrees for 20 minutes.
