2 cups water
1 teaspoon chicken~flavored bouillon granules
3/4 teaspoon dried Italian seasoning
1 clove garlic, minced
2 medium zucchini, cut into julienne strips
2 medium~size yellow squash, cut into jullienne strips
2 medium carrots, scraped and cut into julienne strips
1 medium~size sweet red pepper, cut into julienne strips
1 Tabespoon minced fresh parsley
Combine first 4 ingredients in a large skillet.
Bring to a boil; add zucchini, squash, carrot and sweet red pepper.
Cover, reduce heat and simmer 6 to 8 minutes or until vegetables are tender.
Transfer mixture to a serving dish and sprinkle with parsely.
Yield: 7 servings
